Crockpot Chicken Fajitas
- 4 Breasts of Chicken (sliced into strips)
- 1 Onion, thinly sliced
- Red, Orange & Green Pepper, thinly sliced
- 1Tb chopped garlic
- 3 Tb fresh lime juice
- 1 Tb ground cumin
- 2 Tb @traderjoes chili lime seasoning (If you don’t live close to a Trader Joes you can easily substitute salt, chile pepper & red pepper)
Cover and cook in the crockpot on low for 4-6 hours or high for 2-3. You don’t want to cook it too long because then the chicken will get too shreddy. Shreddy is a word, right? But you know what I mean….
Mix it all together and serve on tortillas. Lately, my favorite gluten-free tortillas are from a brand called LaTortilla Factory. Top your fajitas with lettuce, tomatoes, and some Kite Hill plain almond yogurt. I use that instead of sour cream since I keep it dairy-free. Or you could serve it over rice or cauliflower rice. It’s delicious no matter how you serve it!
