Crockpot Chicken Fajitas

I had had this meal on repeat. In fact, I think I’ve made it 3 times within the last month. And I’ve still got no complaints. I love it. My family loves it. It tastes delicious. And it’s super simple. I’m just going to keep making it until someone tells me to stop. Here’s the simple recipe:
Put these ingredients into your crockpot
  • 4 Breasts of Chicken⁣ (sliced into strips)
  • 1 Onion, thinly sliced
  • Red, Orange & Green Pepper, thinly sliced
  • 1Tb chopped garlic
  • ⁣3 Tb fresh lime juice⁣
  • 1 Tb ground cumin⁣
  • 2 Tb @traderjoes chili lime seasoning (If you don’t live close to a Trader Joes you can easily substitute salt, chile pepper & red pepper) ⁣

Cover and cook in the crockpot on low for 4-6 hours or high for 2-3. You don’t want to cook it too long because then the chicken will get too shreddy. Shreddy is a word, right? But you know what I mean….⁣

Mix it all together and serve on tortillas. Lately, my favorite gluten-free tortillas are from a brand called LaTortilla Factory. Top your fajitas with lettuce, tomatoes, and some Kite Hill plain almond yogurt. I use that instead of sour cream since I keep it dairy-free. Or you could serve it over rice or cauliflower rice. It’s delicious no matter how you serve it!
